In 1990, Colette began teaching cake decorating and has traveled throughout the United States, Brazil, and Europe sharing her expertise. She has instructed students at the Culinary Institute of America in California, the French Culinary Institute, The French Pastry School, The Wilton School, L’Academie de Cuisine, and the Notter School of Pastry Arts.
In 2004 she started her own school in New York City where she teaches cake decorating.




Saturday April 2, 10am - 3pm - $325Make a beautiful 3D pillow-shaped cake in a design of your choosing. Cake and all materials provided. You will learn to fill, stack and carve your cake and decorate it with edible tassels, buttons, bows you make yourself. You'll learn techniques such as stitching, quilting, braiding and painting, and you'll leave with a finished cake to share with your friends and family.





Mother's Day Weekend Purse Cake Class: Saturday May 7, 10am-3pm - $325.A unique and fun way to celebrate with mom: take the class together, or make a cake for her as a surprise! In this one day class you will learn how to fill, stack and carve a purse-shaped cake, then cover it with fondant and decorate it however you like. Make a replica of your own favorite handbag, or make the ultimate designer 'knockoff'. All tools and materials will be provided, including the cake. Colette will teach you many valuable tricks for making realistic-looking details, like stitch marks, 'leather' handles and shiny metal hardware.



Shopping Bag Cake Class: Sunday April 3, 10am - 3pm - $325.In this class you'll learn to make a cake shaped like your favorite shopping bag, complete with colors and logos in a design of your choosing. We'll cover how to assemble and carve the cake to look like an actual bag, and how to make fondant and gumpaste look like tissue paper. You have time to make a variety of edible objects, such as makeup, jewelry, scarves and other goods - whatever you can think of - to spill out of the bag. Perfect for the shopaholic in us all! You'll leave with a finished, edible work of art, as well as a lot of new decorating tricks up your sleeve. All materials provided, including the cake.
